Partner Spotlight: Bucha Brewhouse and Bistro

With farm-fresh ingredients, unique beverages and an inclusive menu that caters to everyone’s dietary needs, Bucha Brewhouse & Bistro offers healthy food without sacrificing flavor. 

Located in the Mercer Street Grassroots District, Bucha Brewhouse & Bistro’s vision is to encourage a culture in our state that empowers people to take control of their health and well-being through serving wholesome, made-from-scratch recipes. 

Owner, Kayla Alred opened the restaurant in the fall of 2018, after she discovered the need for more fresh and healthy options in the area. 

“When my mom was alive she had a very restrictive diet and needed better access to healthy food,” Alred said. “I was inspired by always cooking healthy foods for her.”

Bucha Brewhouse & Bistro sources ingredients from local growers and has a dedicated gluten-free kitchen. Everything on the menu, from the house-made Bucha Bread to the double-layered cake is gluten-free. But the “friendly options” don’t stop there. There are many vegan and vegetarian options, including made-from-scratch soups, sauces and dressings. 

“Our sauces and dressings have significantly lower calories than what the normal counterpart would have,” Alred said. “For example, our vegan mayonnaise that we make has under ten calories per tablespoon, and the same goes for our ranch and tzatziki.” 

Customers with dietary restrictions are encouraged to ask questions about the ingredients of a particular meal when ordering so any cooking adjustments can be made.

The extensive menu features soups, salads, paninis and quinoa bowls, as well as entree dinners and family-sized items. 

“My personal favorite dish is the Tomato Medley Flatbread, which is a nice, light meal,” Alred said.  “It’s our house-made flatbread, with fresh mozzarella, tomatoes, basil and a balsamic reduction.”

One of the bistro’s most popular menu items is the Roasted Chicken Panini. The sandwich — oven-roasted chicken, goat cheese, pickled red onions and blueberry balsamic — highlights a unique combination of flavors. 

Alred, a certified professional mixologist, spent seven years creating signature drink menus for restaurants and has since utilized her skills for one-of-a-kind flavors and different taste profiles for the brewhouse’s kombucha.

Kombucha, the restaurant’s specialty, is a lightly fermented tea or coffee. The drink is made from a process of fermenting sweet tea on a SCOBY (a commonly used acronym for “symbiotic culture of bacteria and yeast”). Although it is fermented, the bacteria in the SCOBY eat the alcohol and sugar so it’s left with very little of each. Kombucha has a nice carbonation and is packed with probiotics. 

Alred is always blending new and exciting ingredients for a refreshing variety of kombucha options. Various flavors are created by using fresh fruits, vegetables, flowers and herbs. Seasonal flavors have ranged from Pumpkin and Spiced Apple to Peach and Tropical.

“Each week we put out a new flavor or several flavors depending on how the kegs are moving,” Alred said. “But every week you come in here, you are guaranteed to see a couple of new flavors.” 

The Bucha Brewhouse & Bistro is located at 957 Mercer Street in Princeton.

“Local businesses are the heart of the community. We do everything we can to give back to the community and provide services that people around here really want and desire,” Alred said. “Plus, in the Grassroots District, there are many nice, local businesses so it’s just a really fun time to come out and support all the businesses on the street.” 

The restaurant is currently operating on reduced hours, from 10:30 a.m. to 4 p.m. Wednesday through Saturday.
